I'm getting lots of stories about "cousins" and "friends" whose employers offer pet insurance as an option through their cafeteria plan. Is this something we can really do, or just an urban legend?

Pets are not "dependents" under any defination in the IRC (even though we often think of them as family), therefore "pet insurance" would not be an eligible expense for a Section 125 Plan

What about parents? Does anyone know any companies that provide health insurance for parents of employees?

Regardless of whether it is offered by the employer, the test as to whether it can be pre-taxed under Section 125 is whether they are a dependent as defined by the Internal Revenue Code.
